Sausage/Kale Frittata


1 small shallot, thinly sliced

2 turkey sausage (uncooked) casings removed

1 cup chopped kale

A splash of unsweetened non-dairy milk (if you are not dairy intolerant then use organic milk)

1 tablespoon of olive oil

3 eggs beaten/season with Himalayan Pink Salt


Pre-heat oven to 400 degrees.  I use my toaster oven for a small frittata like this one.

In a small cast iron skillet sauté the shallot in the olive oil for about 1 minute.

Add your turkey sausage meat and sauté until cooked through

Add you chopped kale and allow to just wilt. 

Now add your egg mixture and allow to set for about 1 minute on the stove.

Pop into the oven for about 10 minutes.  Enjoy!
